Mashed vegetables! One of my favorite foods. It's so simple, and can be flavored to fit your mood.
The cover photo is of mashed potatoes, topped with Kale and Red peppers that I fried in coconut oil (and a little bit of sesame oil!). It was SO good! Super easy to make.
The mash in the below picture is more often what I make. It's a mashed mix of potatoes, beets, turnips, carrots, and parsnips. The greens on the side, are been sprouts that were fried in butter with mushrooms.
The Basic Mash:
